Kitchen Play Event with Zespri Kiwis: Kiwi Avocado Bruschetta

Ah! Summer is almost here and you know what that means…warm sunny days, late night walks and of course, fresh fruits and vegetables galore! I have so many favorites that sometimes it’s hard to choose what to eat! But, one of my favorite fruits and something I like to have on hand for my family as snacks, are kiwis. Thanks to Casey over at Kitchen Play, and her innovative way to share recipes and ideas through her Progressive Party and along with Zespri, one of the #1 sellers of kiwis in the world with not only a fine fruit to sell but a respectable and ecologically sustainable growing method as well- I get to share with you one of my all time alternatives for kiwis!


So, instead of just slicing your kiwi up for a fruit salad, or cutting off the top and spooning it out with a spoon, one of my favorite ways to eat it, instead, serve it up as an appetizer with this Kiwi Avocado Bruschetta! YUM!




Kiwi Avocado Bruschetta

1 French baguette
2 tbsp butter
Fresh Mozzarella Cheese
Your favorite salsa (amount varies depending on how many servings you are making)
1 tbsp lime juice
1 tsp coarse sea salt
1 kiwi, peeled and diced
1 ripe avocado, diced

Directions:
Heat oven to low broil or heat your grill to low. In a small microwave safe bowl, melt butter. Slice bread into 1 inch slices and brush melted butter on top. In a small bowl add kiwi and avocado and about 1 tbsp of lime juice and toss. Sprinkle with sea salt and set aside.

Slice cheese into ½ inch slices and place on bread. Spoon a very small amount of salsa on top of cheese and heat under broiler or on grill until cheese bubbles. Remove from oven or grill and immediately top with kiwi avocado mixture and serve!

I am so curious about how the textures work between the avocado and the kiwi though I'm positive the flavors would be fantastic. Love that you added the mozzarella and salsa too!

Sounds like a really interesting combination of flavours - definitely one of the most unique bruschetta recipes I've seen.
I can't say I've ever pictured kiwi and salsa going together... but I have a feeling I'd be pleasantly surprised. :) Will have to try this next time I'm looking for an adventurous appetizer.
