I just loved science class! Something cool about looking at your specimens and putting together your hypothesis then jumping in to see if you were right. Well, this is just what I got to do thanks to Bob’s Red Mill!
The trusting folks over at Bob’s Red Mill sent me some coconut flour and asked me to experiment develop a recipe to share. Sure, no problem. This is an ingredient I had never used but always wanted to see how it substituted for other flours. So I chose to create a breakfast item.
My hypothesis: Using the coconut flour combined with a little extra liquid, would result in a moist but moist, cake like texture. I did a little research prior to using this flour and had read plenty of warnings about adding either extra liquid or extra eggs to prevent a dry crumbly result.
